British chef Gerard Brack has been appointed as head chef at folly Workshop located at the newly-opened Time Out Market Dubai.
Gerard Brack has joined the brand new folly Workshop at Time Out Market Dubai as head chef. Working alongside Nick Alvis and Scott Price, Brack joined the folly by Nick & Scott team in Q1 this year, tasked with concept and menu development, while helping to build and train the pre-opening team.
At the helm of folly Workshop’s kitchen, Brack will be responsible for developing menus, staff training, supervising kitchen staff, budgets, costings and implementation of food safety.
Backed by 19 years’ experience, Brack joined Gates Hospitality in July 2020 as head chef of Stoke House, Dubai. Prior to that he held roles as the area chef at Wimbledon Tennis Club in the UK, head chef at Rockefeller Oyster Bar in New Zealand, and senior sous chef at O bar and Dining in Australia.
Commenting on his appointment, Brack said: “working alongside Nick, Scott and the globally recognised Time Out Market team has been an incredible experience. Being part of any pre-opening team comes with its challenges, however after seeing all our efforts come to life during the first month of opening it has definitely been worth the long weeks and late nights. Myself and the team will now be focusing on driving the brand forward while continuing to serve up the city’s best British dishes.”
